Monte Villalba extra virgin olive oil comes straight from Mancha Alta, in north west La Mancha, Don Quixote´s country. It is here where Gigüela river runs very close to the Hispano- Roman town of Segobriga, that Monte Villalba SL cultivates vast groves of the picual and cornicabra olive varieties, on the Monte Villalba and La Martiniega estates, which have belonged to the Alonso family for at least two centuries. The clayey calcareous soil in which the olive trees are planted is fertilised with the manure of sheep and goats raised on the estate on open pastures. To supplement the often low rainfall, the crops are irrigated with fresh river water. The olives are harvested on the property by hand, shaken down in the traditional way using a long pole. Only those olives which are of the absolutely best quality go to make Monte Villalba oil. The oil is obtained by first cold pressing in the traditional way, with no chemical products or processes, under the eye of a master miller.
